Kenkey is one of Ghana’s most iconic and beloved staple foods – a traditional fermented corn dumpling that has sustained Ghanaian communities for centuries. Made from fermented maize dough that is partially cooked, shaped into balls, wrapped in corn husks or plantain leaves, and then steamed until firm, kenkey has a distinctive tangy, slightly sour flavour reminiscent of sourdough, with a dense yet satisfying texture. The two main varieties are Ga Kenkey (firmer, wrapped in corn husks) and Fante Kenkey (softer, wrapped in banana leaves). Best enjoyed with grilled fish, shito (Ghanaian chilli sauce), fried fish, pepper sauce, okra soup, or palm nut soup. A cultural symbol of Ghanaian culinary heritage.
